The Great Faucet of Doriath

catching up

Im now playing catch up with all my post backlogs. And believe me, they are a lot. So please be don't surprised to see plenty of new posts from me because this is something I have to do now. I won't have any more time to do it in the weekdays so I'll have to do this now. Good thing there is already LAN connection in our bedroom, and my dell memory is around 2GB. Its fast for me, and actually when I open up my adobe photoshop files they open up easily, though I have not really tried to do an actual layout in my office laptop since I use it the whole day at work, and then sometimes leave it in the office at night, or sometimes just take it home and do nothing. hahahaha.... Ok, so I still download a LOT of scrapbook kits. Pardon me, but its my biggest weakness. Seriously.

on window blinds

this morning the person I called to yesterday with regards to re-upholstering our sala set came by. actually my main concern with them is to have a quotation for the re-upholstery of the sala set, and to ask how much it would cost to have my first sala set covered. We kinda kept underneath its plastic sheets because we didn't want it to turn black of dust. I also asked them how much it would cost to have some curtains made. he didn't give me a quotation, though it seems to me they are expensive with their service. 6,500 just for labor charges on upholstery is a lot. I can only guess how expensive it would also be to have those curtains made, which is sad, because I wanted to get rid of the window blinds for a change in atmosphere. it looks like it will actually be cheaper to just buy the ready-made ones in Divi. That is the next thing on my agenda, well at least once I get me some money. heehhe...

Foray into Plumbing

Well, I've soldered a few pipe joints. It's fun to use a propane torch. I originally bought the torch for doing creme brulee and roasting peppers. It seems that one can use it for this stuff, too. I haven't worked on the supply pipes yet (translation: I haven't shut off the water, screwed something up and necessitated a night in a hotel), but I built the riser to the showerhead, the elbow that goes down to the faucet (shown) and the wooden supports that will hold them. The previous work is unimpressive (that is, if you are impressed by watertightness and structural integrity). I want to pressure-test my joints before I start sawing supply lines in the wall, but my confidence has increased.

Overdue Bathroom Status Report

Several weeks ago, we made some important strides in the bathroom project. We installed the vanity and its plumbing, and we reinstalled the toilet. I did some drywall work in there, too. Lots of trips to Home Depot and plenty of help from my father-in-law were involved. I would have posted a while ago, but Blogger refused to work.


Yes, that's a functioning half-bath you're looking at. Very satisfying. It was good to have when all of my siblings were staying last weekend. That's a whole other post, however...

New Sewing Projects

I was also able to do several projects the past few days. I haven't finished the projects I intended to do from my current favorite blogsite, until then I'll be doing the stuff there. Luckily when I went to the market I was able to buy some zippers, ribbons and bias tape (which I later on found out was too small and hard to use under several fabric layers. yaiks.  Here are some of the newest projects on the house:

1. My sewing machine's new dress. Yup, surely I got it from the website of Ashley here.  It came out nicely with my revisions, such as the foam inside, and the ribbon went to one side only. I also made a small pincushion earlier on, which matched the fabric of the cover. They do look cute together, don't they? :-p

2. I was also able to make a hot & cold rice bag out of the tutorial here.  I've seen this around bazaars last year though I am not sure what material they put inside. Nonetheless I'm thinking of making it my christmas gifts of love this coming holidays, but will have to research on what best to put inside. Its supposed to be put on microwave for heat (2-3 mins I guess) and then a couple of hours on the freezer for the cold. I tried it on both and it worked, albeit I can still smell the rice grains. Perhaps some organic floral beads can be placed inside. I'll try that soon.

3. And here's another throwpillow case set from the scrap fabrics I had. So cute! Its made of soft stretch cotton so its smooth to use. love it!

Wellness program

In the office we have this Internal Wellness Program wherein the employees have a 6-month personal goal for them to accomplish. This can either be weight loss, gain or maintain. Of course, given that most of the people in our office live quite a sedentary lifestyle (myself included), a lot of the employees have a weight loss program put into place for them. The program runs April-November, and everyone is required to join at least 4 activities every month, and are required to keep up with the target set for them. For me, fortunately, the target was to maintain my weight, but I need to do some strength training since I could not even finish 1 curl-up. Hahahahaha.... I always argued that I love my sedentary lifestyle, unfortunately I'm quite forced to live a more active life. We will see.... Wish me luck!

A Seal Having His Teeth Brushed

jessica's nursery

jessica's nursery is by far the most loved room in our new house. we all like it there, because of the ambiance and the fact that it is really the most convenient place to be with (except of course, for the kitchen, which i my personal favorite also). we always get a relaxed feel staying there. even if jessica is asleep. we normally stay there just to watch tv and keep a watch on jess, which is more convenient to do when the little tyke is sleeping. because if she's awake, all you will be able to do is watch over her while she is busy with baby gifts to her. toys, learning stuff, and stuffed toys alike. its such a good thing she has the dora tent there, all her stuffed animals are there and not accumulating dirt and grime. needless to say, i love that room very much. :-)

Developing Jessica's Artistic side

This morning our family decided to go to Trinoma to have a little family time.  We had to leave early because we didn't want to have a hard time getting a parking space (QC malls are notorious to me for having limited parking spaces, no matter how big the malls are, same with SM Megamall).  We also had to drop by my mom and dad's house to give them some chicken nuggets so we went out early.  We did arrive at Trinoma around five minutes to 10am so we got a great parking space but the mall was still closed, we had to wait around 10minutes or so.  It wasn't too bad, except Jessica wasn't in much of a mood to go around walking.  We first let her play at Kevin's playroom at the Kids Zone.  The one hour there will give me and hubby some time to walk around the mall by ourselves, plus it lets Jess interact with other kids there.  I saw the Gymboree there also offered an hourly rate, but it costs a whopping Php 320 an hour, so I had to beg off on that, I should get a trial class instead. hahaha :-p  Anyway, we ate lunch after fetching Jessica when the hour was done, and so her wearing a pirate's hat and a sword.  Really cute but she removed it even before I got to take her picture. duh.

We decided to eat first before going around again, and unfortunately Jessica requested to eat at Jollibee and we didn't have much of a choice.  Gave her a jolly kiddie meal and she was happy for a while until she requested for something we couldn't understand (except for a word: yellow!).  After she was done crying we just told her we're going to the toy store and it improved her mood. We  went to Toys R Us and Jessica would point at so many toys she wants which I would reject because they seem pretty useless to me: stuffed toys, barbie dolls, pink wand, etc etc.  But she did point some stuff that would be useful like Megablocks, but she had those already and won't need new ones.  She then got this one and for me its pretty useful and would be something good to develop her artistic and creative side, which I think really has potential (hubby draws well and is good at this, I AM NOT! hahaha).  And its handy enough to bring anywhere. I may just need to replenish paints and crayons (and lots of paper) but essentially its easier to lug around because of the compartments and the retractable legs.  It costs Php 1,399.  But hubby agrees its worth the money.  So I went for it.  We also bought some drawing notebooks, more markers, poster paint and glitter paint (Jessica wanted these) at National bookstore.  I'm happy she loved it and used it immediately after we unpacked it.

 This looks like a laptop table.  She can sit on the floor or couch when the legs are used or use the table on top of a table when the legs are folded.

The paper can be locked in so it won't move while she's working on her artworks.  Notice too the slots above so she can easily place the watercolors in separate compartments.  I see these watercolor types in Japan home for 88 bucks so I know I have a problem once the first set runs out.

Under the blue cover comes separate compartments and free art materials: 8 watercolors, 2 containers for water, one of which has this great cover of using a brush, 5 markers (the ones we bought from National are already included here), two brushes and 12 crayons.  I was also able to sneak in the scissors - Jessica loves to cut paper.  

Clean up is pretty easy since we can easily wash or wipe it, whichever would be applicable.  I love it! 

I think this is more effective than the megasketch we bought just a week ago, which can be used by our next child anyway so I'm not too sad she doesn't use it much -- she was back to asking for bond paper after a day! :-D

And then my recurring thought is this.  I am glad and thankful that I have a good career that allows me to buy these things for her.  When she starts studying and we're spending 2x what we spend now on tuition fees, these gifts won't come off as easily. 

Happy Thanksgiving

Bryan took this photo; I was occupied cooking. I cooked all day and then some, and I had a great time. I was tired, stuffed and inebriated by the end of the day, infused with that fine Thanksgiving feeling. This was my brother's first North Carolina Thanksgiving. It's great to have him here; it was with Bryan that I developed a love of cooking for crowds, particularly for the eight Thanksgivings we spent together in San Diego.

The Menu:

Hors D'Oeuvres: Dates stuffed with cream cheese and walnuts (by Lindz), smoked oysters

Roasted Turkey (an ordinary $.79/lb bird from BJ's, brined and prepared according to The New Best Recipe)

Cranberry Onion Confit (from The Best Recipe, previous edition of the above cookbook) - I'm glad I kept the old edition; they took this recipe out of the new one.

Roasted Garlic Mashed Potatoes (prepared according to my own technique: unpeeled russets, three bulbs of dry roasted garlic, butter, half & half and salt & pepper)

Turkey Gravy (Tyler Florence's idea made sense to me. I used a few pounds of turkey wings and some aromatics and made this independently, instead of screwing around with the drippings.)

Bread Stuffing with Granny Smith Apples, Carmelized Onions, Bacon and Sage (from The New Best Recipe, and this is the third year I've made this one.)

Gratin of Braised Kale (my own interpretation of a couple of recipes in Saveur magazine, braised with smoked turkey wings and covered in bechamel sauce)

Wine: Georges DuBoeuf Beaujolais Nouveau 2006, kindly supplied by my in-laws, Hayman Hill Pinot Noir 2005 Santa Lucia Highlands, kindly supplied by Bryan, Andew Quady Essensia Orange Muscat, supplied by me

Incidental Alcohol: Lindemans Framboise Lambic, Brooklyn Black Chocolate Stout and a bit of Bryan's Barenjager the previous night while brining the turkey

Dessert: Cranberry Apple pie and Pumpkin pie, by Lindz and her mother (accompanied by lattes made by myself and Lindz)

I have no pictures of it, but we rearranged the furniture and put the Gramma Table in the the middle of the living room. Seven of us sat around it, and a good time was had. I admit that I was quite pleased with myself; I made a big meal for others' enjoyment, and it was the best kind of cooking: slow and from humble ingredients.

Weekday bonding time

Its 5:15 and I am waiting for my daughter and yaya to arrive so we can go to Megamall.  Somehow I like that we get to spend some hours at the mall for some bonding time (dinner + malling).  Because normally during the weekends time is spent for chores or resting at home or going places we need to go to.  And malls are usually very cramped on weekends and parking is hell.  Weekday traffic can be bad as well but at least we don't have trouble parking, and the number of people around the mall is forgiving.  I don't know yet if it will get any worse with the Christmas season, thereby we will have to cut back on the weekday visits.  I guess two or three more weeks will be ok, but by December I can forget about it with all the traffic that is Ortigas.

Good Locovorous Weekend

I did a big shopping run at the farmers' market on Saturday. I decided to turn some of the local eggs into pasta:

The cutting of the tagliatelle (they're actually more easily handled when I cut them by hand):

And the kitty cat keeps everything under surveillance:

The tagliatelle was adorned with a sausage ragu (the sausage also came from the farmers' market) and roasted asparagus and walnuts. Walnuts are good on pasta! Why didn't I stumble on that before? We didn't starve.

The Reveal

We completed tiling and grouting today. Aside from the toe kick, a bit more grout sealing and a bit of moulding, this kitchen remodel is full-wrought.
In an effort to diminish the green pallor cast by the fluorescent lights, I used an incandescent work lamp (you can see its reflection on the fridge).
Big Red looks rather handsome with a backdrop of subway tiles, wouldn't you say?
And my favorite part: the capacious single bowl sink and the Great Faucet.
We moved into this house in the summer of 2004. Of the items in the kitchen at that time, only the floor and the window remain unchanged. Old carpeting in the hallway will next undergo our wrath.

accidents

I hear soooo many accidents happening lately. Around a month ago there was the accident along edsa where an ethanol truck crashed into the middle of the edsa underpass railing, causing a long, long queue of traffic on a monday morning. Boy, is that guy gonna need a good truck accident lawyer, because for sure some concerned individuals would probably want to file a case against the poor guy, though I doubt people would want to feel bad from him because of the huge traffic and delays he caused.

well, the justice system must work with things like this. more and more truck drivers are getting to be a pain in the streets what with their attitudes and their perfect disregard for traffic rules. something's gotta be done. and fast.

Salmon in the Sun

A friend of mine asked me to smoke some salmon for him. Here it is after being taken out of the salt. It will air dry for a few hours to develop a pellicle, and into SmokeDroid it will go.

Another day of gluttony and excess at Blauhaus is in the history books. The dinner crowd numbered eight in all. I spent most of the day cooking, as is my preference, and we sipped wine and nibbled things all the way through. Once again, we brought the Gramma Table in from the deck, and it rendered excellent service:
We had some very tasty wines. In addition to Beaujolais and a number of my perennial Trader Joe's favorites, we had Schug Sonoma Hills Pinot Noir, Cocodrilo Mendoza Cabernet (a very tasty, polished Argentinian wine), and then we enjoyed two wines of note the next day: Three Rings Shiraz and Clarendon Hills Brookman Vineyard Syrah (a powerful leather, pomegranate and spice-packed brute that we drank for last year's anniversary).

If I do say so myself, we ate well. The picture does not exactly illustrate the amount of garlic mashed potatoes I made. This is an 8-quart stockpot, mostly full of spuds:

I roasted a lot of garlic. Bryan took this pic, and it's only as much garlic as I could fit in my hand. There was plenty more. I pureed it and put most of it in the mashed potatoes, and a generous amount went into the garlic butter.
Here is the complete day's menu:

Breakfast: Maple/Bacon/Scallion cornbread, made by Lindsey (she will hopefully put a picture of that on her blog)

Grazing Nibblies: Dates stuffed with cream cheese and walnuts (by Lindz), Brie smeared with Trader Joe's ginger jam (by Lindz), smoked oysters, crackers, French bread (by me), garlic butter

Dinner: Roast Kosher turkey (Bryan obtained the 12 pound bird from Trader Joe's), cranberry-onion confit, garlic mashed potatoes, hand-made gravy, bread stuffing with apples, sage and bacon, green bean casserole (by Lindz's aunt Barbara), artichoke dip (also by Barbara), more French bread

Dessert: Mocha torte (by Bryan), ginger pumpkin pie with real whipped cream (by Lindz), too much port, not enough water (by me), about half of Bryan's bottle of Bärenjäger honey liqueur

It was an enjoyable meal, and the conversation was ebullient. Lindz and I put some real work into making the house a welcoming place (getting a big chunk of cabinet installation done, cleaning the house, cooking, etc.), and I'd say we succeeded.

Culinary Postscript: Gravy

I put a lot (probably a disproportionate amount) of care and energy into gravy. I think it is an often-undervalued item, a potent plate-unifier and vehicle for flavor. This year, I did not succeed in finding turkey wings on my last-minute trip to the Food Lion. I usually use these to make turkey stock so I don't have to rely on drippings from the main bird (they can get burned, it's a tricky, messy procedure to get them out of the pan, and you can't have them until late in the meal prep). Nevertheless, this year's gravy was good. I think my thin, sharp new Japanese knife played an important part. For the first time, I cut my aromatics truly fine. It makes a difference. Gravy is an expression of care, attention to detail, the innate flavor of the ingredients, and technique. Here is the 2007 Blauhaus Gravy:

Three carrots, brunoise cut
Three ribs of celery, brunoise cut
One medium onion, minced
Three cloves of garlic, minced
One bay leaf
One star anise
One chile de arbol
A fistful of fresh thyme sprigs
One sprig of fresh rosemary
One quart of organic chicken stock
One turkey neck
A gob of chicken Better then Bouillon, to taste
Turkey drippings (they didn't burn)
Blond roux (I think it was 3 tbsp of butter and about 1/3 c flour)
A bit of cornstarch at the end, as necessary

Sweat the carrots, celery, onion and garlic in a bit of olive oil. When they've softened a bit, add the chicken stock, turkey neck, anise, bay leaf, chile, thyme and rosemary. Simmer this slowly, stirring occasionally, while you're doing everything else. We're talking about a few hours here. Add water if you think you're reducing too much. Reduction means flavor, so balance how good it tastes with how much gravy you'll need.
Within an hour of service (but before you're dealing with getting the bird out of the oven), make some blond roux in a smaller (1 1/2 or 2 qt) saucepan. Strain the gravy into this roux pan. Squeeze what liquid you can out of the solids and discard them. Whisk. Whisk. Bring it to a simmer. Whisk. Adjust the seasoning with the Better than Bouillon (I treat it as salt in a situation like this). The gravy should be a bit thicker now. Cover it and set it aside, off the heat. Deal with the turkey and stuffing. At this point, I added the drippings while the bird was resting, and I thickened it just a bit more with cornstarch. The roux makes for a better consistency, so I didn't use cornstarch alone for thickening this.

One of the things I love about Thanksgiving is how this meal is the essence of what I see as the greatest cooking: turning humble ingredients into very special food. There were no expensive or exotic ingredients here. Next year, I want to get an heirloom turkey, or perhaps a goose, and one might consider that semi-exotic. To someone without a farm, perhaps it is. Anyway, that's next year.
